Chinese, Greek or Italian  inspired ingredients & dishes are no longer considered ethnic as they are consumed on an everyday basis. Also, there is a clear difference in the preparation, cooking styles & final presentation of "North Americanized" Chinese, Greek & Italian recipes. That is why so many tourists are often surprised when traveling abroad to these specific countries. We often hear that "the food simply tastes better at home"....

With globalization, it has become easier to access the vast wealth of ethnic ingredients, dishes & cooking methods as well as having access to individuals who can actually aid in the preparation of authentic flavours, colours & presentations. According to an article published in Food Technology (Border Crossings; November, 2011), Italian is still the most popular "ethnic food" with 43.22% of market share in ethnic foods category for new products, but Indian (14.38%) is a popular 2nd. Chinese (12.34%), Thai (9.89%), Japanese (5.57%) & Greek (5.06%) inspired products are also showing great potential.
